Seeding the Heirlooms

This beautiful February day Eric and I are getting the CSA tomato seeds going.  We have a nice variety for this year.

Roasted Sweet Potatoes

Eric and the kids went gaga over these sweet potatoes.  

1/4 cup vegetable oil
2 lbs sweet potatoes, peeled and sliced
2 tablespoons brown sugar
1 teaspoon cinnamon
3/4 teaspoon salt
pinch of pepper

Preheat the oven to 375.  Pour the oil into a 9x13 baking dish, and place in the oven until hot, about 5 minutes.  Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven turning after 10 minutes.  In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.  After the 20 minutes, remove from the oven, and sprinkle with the brown sugar mixture. Stir to coat.  Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown.  Remove potatoes to paper towels to drain, then transfer to a serving dish.

Sausage Corn Chowder.

This is a hearty and easy supper.  And it can be ready in about 30 minutes!

1 lb. Italian Sausage, casing removed
1 medium onion, chopped
4 cups potatoes, diced
3 cups water
2 teaspoons dried Parsley
1 teaspoon dried basil
1 teaspoon salt
1/2 tsp. pepper
1 can evaporated milk (12oz)
4 cups corn
In soup pot over medium heat brown sausage and onion.  Add potatoes, water, parsely, basil, salt, and pepper.  Bring it to a boil.  Reduce heat and simmer 15-20 minutes.  Add remaining ingredients cook 5-10 minutes longer.
